Cooking Light

A spotlight on renowned chef Gavin Kaysen, and how Hennepin Made helped to light up his kitchen.

JUDGE THIS BOOK BY ITS COVER

Gavin Kaysen's reputation precedes him. The renowned Minneapolis chef is known for creating some of the most celebrated restaurants in the Midwest and he is the recipient of two James Beard Awards: Rising Star Chef of the Year in 2008, and Best Chef: Midwest in 2018. His eagerly anticipated first cookbook At Home has just been released and we couldn't be more honored to see our Parallel Wide Cylinder featured on the cover.

GOOD COOKING IN BAD TIMES

The book was born out of a series of virtual cooking classes in response to the COVID-19 pandemic. While many of us were stuck at home, the classes provided not only something to do, but a way of connecting through shared food experiences, as the world faced daunting isolation.

"I am a believer that we now have a tremendous opportunity in front of us, which is to help build how we want our profession to look for generations to come…it is not going to happen overnight, but we have to be dedicated to the change and embrace the good that will come from it."

OFF THE PAGES AND INTO THE WORLD

Patrons of Kaysen's Spoon and Stable, may also have noticed Hennepin Made's Parallel Collection and custom installations. Once an actual stable, the restaurant's interior is a mixture of historic charm and modern accents. The downtown hot spot is known for seasonal Minnesota cooking combined with this roots in French cuisine. As part of our community in Minneapolis we're proud to shed some light on Kaysen's vision.
